Homemade Hamburger Helper Cheeseburger Macaroni
Ground Beef (Feeds 6-8 Fat F#cks)
4 slices of Hills thick cut bacon
1.5 # of Lewis Co. Ground beef (90/10%)
2 Shallot and a small onion (or just one big onion)
4 cloves garlic
1 tablespoon 5 g Hungarian Paprika
1.5 tablespoon 4 g Italian herb blend
1/2 teaspoon fresh ground black pepper
1 teaspoon 2 g ground chipotle (chili powder for wimps)
1 tablespoon + 1 teaspoon Morton K salt (this is a lot of pasta, and it is not cooked in salted water, so this recipe takes a lot of salt)
3 tablespoons 23 g Wondra flour
4.5 cups 1065 mL of milk (1 1/8 cup 115 g Nido, and water)
3 cups (500 g) of dried elbow macaroni or your favorite pasta shape I like Casarecce, strozzapreti, or Penne. Rotini is a good one too.
3 cups 340 g (12 oz) shredded Tillamook medium cheddar cheese
Ground Bison (Feeds 4-6 fat f#cks)
1# ground bison (85/15%)
1 tablespoon butter or ghee
1 big onion, diced
2-3 cloves garlic
2 teaspoons Hungarian paprika
1/2 teaspoon fresh ground black pepper
3/4 teaspoon ground chipotle
1 tablespoon Italian herb blend
1 tablespoon Morton kosher salt
2 tablespoons Wondra flour
3 cups milk (3/4 cup Nido and 3 cups water)
2 cups elbow macaroni or 300g of your favourite shaped pasta. I like Casarecce, Strozzapreti or Penne.
2 cups of shredded Tillamook medium cheddar cheese
Procedure:
In a sexy No. 10 or 12 cast iron skillet, heat the butter or ghee over medium heat. Sauté the onions, until translucent.
Then, add the bacon, and cook until al dente. Toss in garlic, and cook for 45 seconds.
Add ground meat, and brown.
Stir in the paprika, black pepper, chipotle pepper, Italian herb blend, and flour, cook for 2 min.
Add milk, and pasta.
Bring to a boil, then reduce heat, cover, and simmer for 10-12 min. Until the pasta is cooked
Stir in the shredded cheese, until melty and yummy.
Adjust the salt
Serve garnished with fresh parsley or scallions (Yeah right)
