2/25/2025 Tacos and Cerveza

I woke up at 5:00 am. There has been some kind of holiday in town. I am ignorant about it, but I heard some folks talking, and it is the biggest holiday of the year. Yesterday was the last day of it. At 5:00 the live music was easily heard in my room. They were still partying! I kind of enjoyed the music, but I wondered if it was not helping me sleep. I went into my toiletries kit, and found my ear plugs. With my senses degraded. I was able to sleep until 7:00.

     When I started my day, I noticed I was starting to feel better. I am kicking the stupid cold virus that has been troubling me. I did my morning writing. At lunch time, I was loosing my ability to think, and needed food. Dave, and Chris followed me in a circle through town. At the end of our walk, we decided to eat at the little restaurant in front of our lodging. If you follow me, you will walk in circles…. I ordered chips, guac, and a Birria sandwich.

     We spent the day walking round town, and having beverages. We had a swim in the ocean, amongst the surfers. I was concerned I would get in their way. Eventually we hit up a swinger’s bar. It had swings hung as seats. I felt very euphoric after my swim, and really enjoyed swinging in my seat, as I bantered with my homies.

Tony, “On my way into the pissour. I was made uncomfortable by the man with the machete. He also had a very large sheath knife. I did not want to pull my dick out. However the tools he had were quite a bit too big for the job!”

I made it back from the WC with my pee-pee still intact.

     The highlight of this day for me, was tacos Al Pastor. There is a spit across the street from the YamBak Public House. There was no signage, but I believe the place is called Tacos Al Pastor Diez. The homies sat in the YamBak biergarten, while I went over and got us tacos; 3, for David, 3 for Chis, and 4 for Tony. I can’t tell you exactly how the break down of the bill went, with tip and all. I only spent 300 Pesos. That is $14.61 USD for one of the best meals I have had!

     I watched them work as they prepared orders. It was very busy at the taco stand. So, there were getting less char from the fire. They had a flat top griddle they prepared the tortillas on. They would also melt cheese on it, as well as “finish” the al pastor before the order went out. I saw them sprinkle some shredded cheese on the griddle. It would get melty, and then they would put a taco face down on top of it. I spend a lot of time cooking food with cast iron, and measuring the surface temperature with an inferred thermometer. From my experience doing that, and watching the interaction of their food with their flat top. I believe it was at a relatively low temperature. I reckon 300º F.

     When they called “Tomy!” I knew it was my order. I watched the lady misspell my name on the ticket. I finished my tacos with a creamy green salsa, and fiery thin red salsa. After eating two of them, I added a savory chunky red salsa to the mix. I can tell you the salt level of these tacos was perfecto. I did not find myself missing the char. I did think these tocos were amazing. However, I do question my perception. When one is feeling the euphoria from a dip in the ocean. After a day of drinking. I don’t know. Where these tacos really as amazing as I thought they were? I am going to have to do more research. I do believe the Al Pastor I have had this trip has been of a higher level than we had in PV last trip. However that was a year ago, and I do recall really enjoying them. I intend to get the the bottom of this! :-)
